2023 was a big year for buffet restaurants. In the past two decades, more and more high-end buffet restaurants have opened in Taipei, and the comeptition is getting more and more intense and goes beyond the food put onto plates.Who Can Run High-End Buffet Restaurants?
High-end buffet is a tough business. A normal restaurant in Taiwan generally gets its gross profits at 50%, however for high-end buffet restaurants it’s around 40%.
The industry is also hard to enter, as a central location and a large venue are typically required, and unlike normal restaurants with a few chefs and less than a dozen waiters, a buffet restaurant needs staffing up to 80 people to serve a typical high-end buffet restaurant that accommodates 300 customers in each time slot.
Hotels and event venue companies usually provide the spacious venues needed for high-end buffet dining. Most hotels turn their restaurants for morning buffets into all-day operating buffet restaurants. However, it is a lot more difficult for restaurant chains as a store in a commercial building usually does not come with a big enough kitchen and fridge.
It requires a lot of capital and experience in establishing a supply chain, building the central kitchen, adjusting the menu, and controlling food waste considered a loss of the business. In Taiwan, only three restaurant chains made it into the competition: Eatogether, Hi-Lai Foods, and Shin Yeh.
